Maintenance of quality of eggs submitted to treatment with propolis extract and sanitizers

This study aimed to evaluate the internal and microbiological quality of eggs submitted different types shell treatments. One hundred forty-four fresh red were distributed in a scheme 4 treatments (no washing; washing immersion chlorine; peracetic acid; spraying propolis extract) x 5 storage periods (7, 14, 21, 28, 35 days), stored at 25°C, each period 6 per treatment analyzed. The parameters assess were: weight loss; weight; yolk albumen weight, diameter; height; height Haugh unit (HU). was evaluated days through analysis for aerobic mesophilic bacteria, thermotolerant coliforms, Staphylococcus spp., Salmonella spp. molds yeasts. with extract only effective one maintain high HU until 21 25°C against contamination all bacterial groups. results presented showed greater effectiveness maintenance eggs, it can be an alternative product chemical sanitizers.
